Okay, I have friends who post recipes on their blog and I thought I wouldn’t really be that person. BUT I have to give this one out! It is great for summer or fall and would be a great side dish even though we ate it as a main.
8 oz. pasta of your choice
1 can diced tomatoes with chilis (without the chilis if you are anti-zip)
1 can yellow corn (drained)
1 can black beans (rinsed and drained)
1/2 cup chopped scallions
shredded cheese (Mexican or cheddar)
While pasta cooks, mix other ingredients. When pasta is done, drain it well and add it to the other stuff. Sprinkle cheese over each serving.
SERIOUSLY – that’s all!!! It is CHEAP, QUICK, and quite YUMMY!
